
Hi, I’m Jun - the baker, educator, and systems-focused pastry professional behind Pocket Baker.
I created Pocket Baker for serious home and cottage bakers who want more than just recipes. If you’ve ever felt like there must be a more efficient way to bake, package and price your products - you’re right.
After 25 years in professional kitchens, I’ve learned that great baking isn’t just about ingredients. It’s about structure, workflow, and repeatable systems.
I’ve spent my career:
- earning a Baking & Pastry degree from The Culinary Institute of America
- working as a banquet production cook at a AAA Five Diamond hotel
- serving as pastry chef for a multi-unit restaurant group
- teaching baking and pastry at a local college
- developing production systems that supported large-scale bread and pastry operations
I’ve produced tens of thousands of baked goods - from pastries and laminated doughs to plated desserts to artisan breads - and refined the workflows that make high-volume production calm and consistent.
Over time, I realized something:
Most home and cottage bakers already know how to bake. What’s often missing is a structured approach to make it repeatable and efficient.
